eggs are a soft substance between the skin and skeleton - especially when in the ovaries or egg sac - as animals can be born with all the eggs in their life. These aggregate and are all morphologically similar in intercellular matter and they act together - by being the collective of reproductive capabilities of the organism
the thing is other parts of a body are not like this - they are outside of the skin and are glandular material - even if they have cells in them. These are things like sweat, bile, hair (outside of the medulla), nails, milk, etc.
however, eggs are different than these - they're inside the body of mammals like chickens (animals like spiders are different - as the egg sac is outside of the body - but they turn into their own animal - so usually those aren't vegetarian either) - and if it's not the body of the mother, it's a body of a child - even if not fertilized - technically any regular living cell can turn into its own body - and that's why they're all not vegetarian. So that's not vegetarian either.
