soak 1 chosen fruit from each color in it until reconstituted (and sticky)
create aquafaba whipped cream by whipping chia gel
opt - don't whip it
mix some spiced orange juice into it
in a large bowl - cover inside with a layer of mint leaves
add a layer of chia gel (whipped or not)
add fruit layers one at a time - starting from red and ending with white
add gel in between - each layer
cover last layer with a layer of gel
opt - follow with a layer of mint leaves
put a serving plate on top of the bowl
flip the bowl over
let the mint leaves fall to decorate the area around the fruitcake
opt - decorate with whipped cream and fresh berries
